Why do some green Absinthes have a very bright color?

Absinthe traditionally is of green color. That is why we also call the drink the "Green Fairy". But if an Absinthe is bright green, you can be sure, that it is artificially colored. You can only achieve a bright green color with coloration. If you use plant-based coloration, you will initially get a dark green as well, but over time this color can lose its intensity changing to a lighter yellow-green, sometimes even amber color. Why? Because sunlight dissolves chlorophyll and therefore as well, the green color can vanish. That is the reason why many green Absinthes are bottled in dark bottles. If you have a clear glass bottle, like we use for Hamlet Classic Green Absinthe, it is important to store the bottle in a dark place. It should not be placed in direct sunlight. But, and this is important, even if the Absinthe loses its initial green color, its quality is not affected. It is a natural process that actually shows you, that you have bought the traditional, classic Green Fairy.
