Because the basis of 0221 is Kölsch, Colognes famous beer. The beer first matures for several months in oak barrels. During storage, the Kölsch absorbs the wooden notes of the barrel and is refined in taste. For the final liqueur, the beer is distilled to produce a beer spirit and then refined with lemon to produce a citrusy-sour liqueur.
